Description

Teriyaki Shrimp Rice Bowls are a quick and flavorful meal made with juicy jumbo shrimp coated in savory-sweet teriyaki sauce and served over warm jasmine rice with creamy avocado, fresh cilantro, and a squeeze of lime. Add your favorite sauce for an easy customizable dinner.


Ingredients

  • ½ pound jumbo shrimp, peeled and deveined
  • ¼ cup teriyaki sauce
  • 3 cloves garlic, minced
  • Kosher salt, to taste
  • Black pepper, to taste
  • Blackstone Sweet Teriyaki seasoning blend, optional
  • Cooking oil of choice
  • 2 (8-ounce) microwave pouches jasmine rice
  • 1 large avocado, sliced
  • ¼ cup chopped cilantro
  • 2 lime wedges
  • Yum yum sauce, sriracha, spicy mayo, or additional teriyaki sauce, for serving


Instructions

  1. Pat the shrimp dry with paper towels. Season lightly with kosher salt, black pepper, and the optional sweet teriyaki seasoning blend.
  2. Place the shrimp in a bowl and toss with the teriyaki sauce and minced garlic until evenly coated. Let the shrimp marinate for 5–10 minutes.
  3. Prepare the jasmine rice according to the package directions.
  4. Heat a large skillet over medium-high heat and add a small amount of cooking oil.
  5. Add the seasoned shrimp to the hot skillet in a single layer. Cook for about 2–3 minutes per side, or until the shrimp are opaque, pink, and cooked through.
  6. Divide the warm jasmine rice between two bowls.
  7. Arrange the cooked teriyaki shrimp and sliced avocado over the rice.
  8. Sprinkle with chopped cilantro and serve with lime wedges.
  9. Drizzle with yum yum sauce, sriracha, spicy mayo, or additional teriyaki sauce according to your preference.
  10. Serve immediately while the shrimp and rice are warm.

Notes

  • Pat the shrimp dry before seasoning to help them sear properly in the skillet.
  • Jumbo shrimp work especially well for rice bowls, but medium or large shrimp can also be used.
  • Avoid overcooking the shrimp; they are ready when opaque and cooked through.
  • Use microwave jasmine rice for a very quick meal, or substitute freshly cooked jasmine rice.
  • Add cucumber, shredded carrots, edamame, or steamed broccoli for extra vegetables.
  • Choose yum yum sauce, spicy mayo, sriracha, or extra teriyaki sauce to customize the bowls.
