Description
Cheesy Hamburger Potato Casserole is a hearty family favorite made with seasoned ground beef, tender sliced potatoes, a creamy mushroom sauce, and plenty of melted cheddar cheese. This comforting baked casserole is perfect for busy weeknights, potlucks, or make-ahead meals.
Ingredients
- 1½ lbs ground beef or ground turkey
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 5–6 medium russet potatoes, thinly sliced (about 1/8 inch)
- 2 cups shredded cheddar cheese, divided
- 1 cup shredded mozzarella cheese (optional)
- 1 (10.5 oz) can cream of mushroom soup (or cream of chicken soup)
- 1 cup milk
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika (optional)
- 1 tablespoon olive oil or butter, for greasing the baking dish
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil or butter.
- In a large skillet over medium heat, cook the ground beef, onion, and garlic until the meat is browned. Drain any excess fat.
- Season the beef mixture with salt, black pepper, and paprika.
- In a bowl, whisk together the cream of mushroom soup and milk until smooth.
- Arrange half of the sliced potatoes in the prepared baking dish. Top with half of the beef mixture, one cup of cheddar cheese, and half of the soup mixture.
- Repeat the layers with the remaining potatoes, beef, soup mixture, and finish with the remaining cheddar cheese and mozzarella if using.
- Cover tightly with aluminum foil and bake for 60 minutes.
- Remove the foil and bake for an additional 20–25 minutes, until the potatoes are tender and the cheese is bubbly and golden.
- Let the casserole rest for 10 minutes before serving.
Notes
- Slice the potatoes evenly for the best texture and even cooking.
- For extra flavor, add cooked bacon, diced bell peppers, or mushrooms.
- Leftovers keep well in the refrigerator for up to 4 days and can be frozen for up to 2 months.
