Description

Cheesy Hamburger Potato Casserole is a hearty family favorite made with seasoned ground beef, tender sliced potatoes, a creamy mushroom sauce, and plenty of melted cheddar cheese. This comforting baked casserole is perfect for busy weeknights, potlucks, or make-ahead meals.


Ingredients

  • 1½ lbs ground beef or ground turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 5–6 medium russet potatoes, thinly sliced (about 1/8 inch)
  • 2 cups shredded cheddar cheese, divided
  • 1 cup shredded mozzarella cheese (optional)
  • 1 (10.5 oz) can cream of mushroom soup (or cream of chicken soup)
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • 1 tablespoon olive oil or butter, for greasing the baking dish


Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil or butter.
  2. In a large skillet over medium heat, cook the ground beef, onion, and garlic until the meat is browned. Drain any excess fat.
  3. Season the beef mixture with salt, black pepper, and paprika.
  4. In a bowl, whisk together the cream of mushroom soup and milk until smooth.
  5. Arrange half of the sliced potatoes in the prepared baking dish. Top with half of the beef mixture, one cup of cheddar cheese, and half of the soup mixture.
  6. Repeat the layers with the remaining potatoes, beef, soup mixture, and finish with the remaining cheddar cheese and mozzarella if using.
  7. Cover tightly with aluminum foil and bake for 60 minutes.
  8. Remove the foil and bake for an additional 20–25 minutes, until the potatoes are tender and the cheese is bubbly and golden.
  9. Let the casserole rest for 10 minutes before serving.
