Ingredients

  • 2 tablespoons butter
  • 2 lbs boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 1 yellow onion, diced
  • 1 celery stalk, diced
  • 4 cups broccoli florets (about ½ lb.)
  • 1 tablespoon olive oil
  • 1 (10.5 oz) can cream of chicken soup
  • â…” cup sour cream
  • ½ cup milk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon mustard powder
  • 2½ cups shredded cheddar cheese
  • For the Topping:
  • ½ cup crushed Ritz crackers or panko breadcrumbs
  • 2 tablespoons melted butter


Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Season the chicken breasts with salt and pepper. Heat the olive oil and 2 tablespoons butter in a large skillet over medium heat. Cook the chicken for 5–6 minutes per side until cooked through. Remove, cool slightly, and cut into bite-sized pieces.
  3. In the same skillet, sauté the diced onion and celery for 4–5 minutes until softened.
  4. Meanwhile, blanch the broccoli florets in boiling water for 2–3 minutes, then drain well.
  5. In a large bowl, whisk together the cream of chicken soup, sour cream, milk, garlic powder, onion powder, mustard powder, and 2 cups of the shredded cheddar cheese.
  6. Fold in the cooked chicken, broccoli, onion, and celery until evenly coated.
  7. Transfer the mixture to the prepared baking dish and sprinkle the remaining ½ cup cheddar cheese over the top.
  8. Mix the crushed Ritz crackers with the melted butter and sprinkle evenly over the casserole.
  9. Bake uncovered for 25–30 minutes, until hot, bubbly, and the topping is golden brown. Let rest for 5 minutes before serving.
