Ingredients
- 2 tablespoons butter
- 2 lbs boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 1 yellow onion, diced
- 1 celery stalk, diced
- 4 cups broccoli florets (about ½ lb.)
- 1 tablespoon olive oil
- 1 (10.5 oz) can cream of chicken soup

- ½ cup milk
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon mustard powder
- 2½ cups shredded cheddar cheese
- For the Topping:
- ½ cup crushed Ritz crackers or panko breadcrumbs
- 2 tablespoons melted butter
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Season the chicken breasts with salt and pepper. Heat the olive oil and 2 tablespoons butter in a large skillet over medium heat. Cook the chicken for 5–6 minutes per side until cooked through. Remove, cool slightly, and cut into bite-sized pieces.
- In the same skillet, sauté the diced onion and celery for 4–5 minutes until softened.
- Meanwhile, blanch the broccoli florets in boiling water for 2–3 minutes, then drain well.
- In a large bowl, whisk together the cream of chicken soup, sour cream, milk, garlic powder, onion powder, mustard powder, and 2 cups of the shredded cheddar cheese.
- Fold in the cooked chicken, broccoli, onion, and celery until evenly coated.
- Transfer the mixture to the prepared baking dish and sprinkle the remaining ½ cup cheddar cheese over the top.
- Mix the crushed Ritz crackers with the melted butter and sprinkle evenly over the casserole.
- Bake uncovered for 25–30 minutes, until hot, bubbly, and the topping is golden brown. Let rest for 5 minutes before serving.

- Rotisserie chicken can be substituted to save time.
- Freshly shredded cheddar melts more smoothly than pre-shredded cheese.
